Litt om aquavit (a little about aquavit).

Aquavit (also known as akavit, aquavite and akvavit) is produced in Sweden, Norway, Denmark, Finland and Northern Germany. It is made from a grain or potato mash that is fermented and then double distilled. The second distillation features the addition of various flavorings, which can include one or more of the following: caraway (the most common), cumin, cardamom, lemon peel, aniseed or fennel.
They are generally not aged. Aquavit is usually drunk straight and chilled, from a small chilled glass. It is a popular (and worthy) accompaniment to Scandinavian food, including the perennially popular Swedish
smorgasbord.
Aalborg Akvavit comes from Jutland in Denmark, and is

  • 1.75 liters potato vodka
1. Gently rinse and towel-dry cloudberries and blackberries. Place in glass jar. Add lemon peel.
2. Pour vodka into jar. Cover, and let stand at room temperature for 3 weeks. Strain vodka through cheesecloth. Discard solids, and carefully pour infused vodka back into original bottle.
3. Keep infused aquavit in freezer until ready to serve. Serve chilled, directly from freezer.

probably the best-known example of the drink in the UK. It has a complex flavor - caraway is very prominent, but there are also citrus and aniseed elements to it. Linie Aquavit is the favored brand in Norway, and is a smooth and powerful drink. Brondum Kummenaquavit is another Danish variety, and is famed for its exceptional smoothness.

Cloudberry-Blackberry Aquavit
Yields: 1.75 quarts flavored aquavit .
Ingredients:

  • 2 cups cloudberries
  • 1 cup blackberries
  • Peel of 1/2 lemon
